start to the new year. I feel like this whole month has slipped right past us.&lt;div&gt;Anyway, just wanted to update everyone on what's new and exciting around Alembic v.2010.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;First, and most exciting, we are now open for lunch, 7 days a week at noon, special menu and all.&lt;/div&gt;&lt;div&gt;We've also got a new menu layout and a bunch of great new additions to our dinner menu.&lt;/div&gt;&lt;div&gt;In the cocktail department, we've a few new cuts destined for the menu soon, but I just decanted a fresh batch of cranberry infused Campari that we're mixing up with a little Cachaca and a splash of sparkling wine. It's a pretty dangerous combination.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Second, which is most likely a first for our fair city, we've got Sutton Cellars Brown Label vermouth pouring on tap. Delicious, bracingly cold, and the perfect pairing for a few bar snacks in the afternoon. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Also, be sure to keep Monday nights free, if beer is your thing (and I know it is!) Every Monday night we are offering our bottled beer selections at 50% off, all of 'em. Aside from our regular list, we'll also be pulling out a few little surprises each week, so follow our Twitter feed to stay in the loop.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Speaking of beer, we are also putting together a tight roster of events for the upcoming SF Beer Week festivities, details to come. Feb 5 through the 14th.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;And finally, this Sunday, January 24th, is this months Savoy Stomp with Mr. Erik Ellestad and a few other friends who will be swinging by. 6pm till late.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Whew! It tends to be a fairly muscular grape, producing wines with intense black fruit and firm tannins. I definitely expected a monster out of this wine but was pleasantly surprised with it.&lt;br /&gt;There is definitely some rich, dark fruit but also some really nice floral notes as well. It's just a tad chewy, but with a nice acidity. Medium to full bodied and a modest 13% abv, I think it makes a nice sipper as well as a good workhorse for pairing with our eclectic menu.&lt;br /&gt;We liked it so much, we bought all of it. Within an hour, the color and aromas were already starting to assert themselves, which should have been a warning, but I let it roll for 2 days to really fortify itself. Looking back, I should have been periodically tasting it and maybe pulled it a little earlier. Nevertheless, it has a deep, rich tomato flavor, even a touch of saltiness that I don't find entirely unpleasant. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt;The resulting cocktail: A simple mix of the infused cachaca, little shot of cane syrup and a thick chunk of lime.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;The verdict: Not a failure by any means but I was looking for something a little lighter, maybe a bit drier and more refreshing. What I got is a deep, sweet and savory concoction. Enjoyable, but I would probably sip one slowly, maybe not take another.&lt;/div&gt;&lt;div&gt;&lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;Next step: I may just cut it with some straight cachaca and back off on the sugar, but really I think the next batch will just infuse a little less time, I also want to try oven drying some heirloom tomato and attempt the same process. Or just serve it with in a little glass of ale, which was quite delicious as well. &lt;/div&gt;&lt;div&gt; &lt;/div&gt;&lt;div&gt;I can think of a lot of ways to take this  one. Perhaps it was the swigs from so many bottles of lukewarm tequila, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;pisco&lt;/span&gt;, or flasks of whiskey, &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_1"&gt;mezcal&lt;/span&gt;, or pot stilled rum. More so, I feel there was so little need for this hyped up event in order to share what really mattered.&lt;br /&gt;&lt;br /&gt;It's pretty hard to get a cocktail in that town, the lines are long, bar staff can be short, if not grumpy. The events are crowded and at the end of the day, most everyone is most interested in just getting drunk. It's not to say that many of the &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_2"&gt;participants&lt;/span&gt; didn't bring their A game, I can't say I spit anything out, but the context just doesn't work for inventive, and dare I say, fussy drinks. Hence, I remember few, if any. Panels become overly branded, overly expensive, and in some cases, irrelevant. Events are overly exclusive, and poorly coordinated.&lt;br /&gt;&lt;br /&gt;Truth be told, cold beer in the swimming pool, a simple shot of whiskey on the rocks, or some gin and vermouth over ice in a plastic cup made, for me, the perfect balm for the sticky temperature and derelict temperament.&lt;br /&gt;&lt;br /&gt;What happens in New Orleans, stays in New Orleans.&lt;br /&gt;&lt;br /&gt;I suppose &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Las&lt;/span&gt; Vegas' well known adage, is applicable in this instance. I dutifully left my camera in the hotel room, intent on just going along for the ride. What I witnessed, I can simply summarize as ranging from mild bravado, to downright narcissism, and debauchery making a crowd of talented service industry &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;professionals&lt;/span&gt; into drunken caricatures of reckless Hollywood stars. All in good "fun" I assure you, but revealing as well.&lt;br /&gt;&lt;br /&gt;The real inspiration I bring back with me had little to do with the circus that Tales really is, but rather the food I ate in that city. This year found me dining far less at the "finer" seats in the city, but more having some amazing, authentic, soulful and &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;unpretentious&lt;/span&gt; meals, with some fine company, at a leisurely pace. Heaps of fried chicken and catfish, piles of greens cooked within inches of their lives, yards of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_6"&gt;boudin&lt;/span&gt;, mounds of alligator, fistfuls of shrimp or crab, smothered in sauces rich and satisfying, all served with simple cans of cold, domestic beer or just ice tea and coca cola.&lt;br /&gt;&lt;br /&gt;I return with a real sense that this "cocktail thing" may just be a bit out of control. We've stopped being servants and craftsmen and become authors, artists, chefs, and technicians. Do we need degrees or crowns?&lt;br /&gt;Some of the best things in life, as in gastronomy or &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;mixology&lt;/span&gt;, require little &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;hermeneutics&lt;/span&gt; or decoding. They just present themselves as they are, satisfy, and then resonate. The way a walk in the park might stick with you better than an art history exam.&lt;br /&gt;&lt;br /&gt;For my part, I still appreciate immensely the hard work and rich creative resources of my colleagues. I maintain a deep respect for &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_9"&gt;experimentation&lt;/span&gt; and innovation, love to be challenged, and whole &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_10"&gt;heartedly&lt;/span&gt; give credit where credit is due.&lt;br /&gt;&lt;br /&gt;That being said, I come back humbled, wishing only to throw some thick chunks chilled melon into a glass with a small sprig of fresh herb and a healthy dose of &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_11"&gt;blanco&lt;/span&gt; tequila and a twist of lime, set it carefully on a cocktail napkin on a clean bar top, smile and be smiled at. Either that or a shot and a beer. We've got some nice raspberries growing right out back. Melons are starting to taste pretty incredible now too, so I expect to be pouring out some nice agua frescas real soon.&lt;br /&gt;We did some cool punches for this months Savoy Sunday, so those might be joining our summer line-up in the near future too.&lt;br /&gt;Back in the kitchen, Ted and Jordan have been cranking out some killer pork belly "blt" sliders, some duck confit with miatake and peaches, and some amazing baby back ribs crusted with popcorn and chicharrones served with sweet potato salad. Got to try some really great infusions and cocktails featuring rum from the kind folks at Ron Zacapa, and some Sagatiba cachaca jams as well. &lt;/div&gt;&lt;div&gt;It was great to have some out-of-town talent around to share the excitement surrounding a robust scene of local bars and restaurants who are truly doing world class work right here in SF.&lt;/div&gt;&lt;div&gt;I hope that this cocktail week can grow to bring even more of that around, as I feel it is a chance to showcase our work and share ideas and inspiration with a more national and international audience.&lt;/div&gt;&lt;div&gt;I'd also like to thank Erik Ellestad and all who joined us for a bustling Savoy Stomp on Sunday night. It's rewarding to see so many people taking chances on some interesting cocktails and celebrating the history of the craft. Sometimes it's nice to write it down and see how it feels.&lt;div&gt;Kind of inspired by our cache of Stranahan's wine cask finish, so I wanted to flesh out a Manhattan-type cocktail. Strawberries are looking pretty good right now, so I dropped a bunch in some Punt e Mes. I can tell you that the smell is incredible, I plan to puree the hell out of it and strain out the liquid, nice and thin. Looking for some elegance to this, not too chunky or rustic. I also wanted to play with some different sort of bitter, a little brighter and herbal, sort of springtime garden-esque. So I thought of parsley, and decided using a little oil to get some pretty green drops on top of the cocktail might be pretty and reference the tops of the strawberry. I blanched the parsley and pureed it with olive oil and a few drops of peppermint oil to give it a little more lift. Hopefully I'll get that all put together and post a picture later.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Another nice combination I've been playing with is fresh cucumber juice (english cukes, skin on) with Lillet blanc. I tell you, just the two elements are so delicious, I am hesitant to add much more, but I am thinking just a dash of black tea and maybe just the tiniest splash of cava to round it out. I picture pitchers of this bright green stuff.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I plan to have a few new numbers on the menu by early next week, but if you're in the neighborhood, come by and ask me. Fun group, they polished off quite a few "whatever you feel like making" which was a bit of a gymnastic routine, but the real gem was a few small, unmarked bottles of some very interesting, one of a kind, never-to-be-released, experiments. Among the tastes being passed out was a candy cap mushroom infusion (like an earthy maple syrup, delicious), an aged sunchoke distillate, a blend of single village mezcals aged in french oak, a tasty cherry cordial.&lt;br /&gt;I really appreciate the sort of individuals who throw this crazy stuff into a still, barrel, bottle just for the hell of it. I always find it difficult to balance the cocktail against the dish, with out one sort of taking the lead.&lt;br /&gt;A pairing should be just that, a pair. They make sense together, and bring out some qualities in one another. Put a big drink next to a svelte dish, however and it just looks fat.&lt;br /&gt;Not that each cocktail needs to be menu-bound or even menu-worthy, but each needs to stand alone as complete. (I doubt any of these would make it onto our list.)&lt;br /&gt;That being said, it is a nice excercise in restraint and focus, yeilding some surprising flavor combinations that I would like to explore further. (wish I'd brought my camera today)&lt;br /&gt;1. Honey and hot mustard. I was really just fooling around with this, finding it perhaps a bit campy for my taste, but I was pleasantly surprised at the balance of sweet and astringency, with a light, spicy, but not hot finish. The mustard really cleaned up the palate, making it quite food friendly. I plan to pair this with a pork belly, crawfish, uni, and ramen dish in a very simple pork stock, so I mixed it with some Dickel 12 yr whiskey and a little dash of bitters for a little cinnamon note. Result: A somewhat rich, sweetish, nutty old fashioned that mimicks the sweet, fattiness of the food while helping to cut it. I'm gonna have to put the mustard through some other trials, or find some similiar products to toy with.&lt;br /&gt;2. Sometimes I find myself starting with a taste or ingredient and trying to put it back together from it's parts. I wanted an earthy berry or tart melon flavor for a cocktail, but nothing turning me on. Answer: I mixed a little Clear Creek Framboise (for the earthy funk), with some California port (for a little body, and some bright berry fruit), dash of grapefruit (for a touch of bitterness and tartness), and a little sugar to sweeten it up. It was showing pretty well, my little franken-fruit. To help lighten it and give a little more acid, just a shot of sparkling wine. It's a nice drink, kind of big and floral nose, but dry. Probably the toughest pairing, with yellowtail two ways, asparagus, eggs, avocado. Definitely turned on by the framboise/port combination. I think more and more how to smuggle a little earthiness into a cocktail without being bottom heavy.&lt;br /&gt;&lt;br /&gt;The others are pretty simple, yet effective little haiku's:&lt;br /&gt;Mezcal, ginger, lime with Abalone yakatori&lt;br /&gt;Aquavit, maraschino, sweet vermouth, lemon, tea with Squid stuffed with blood sausage.&lt;br /&gt;Chilled shot of Jewel of Russia vodka with the tiniest drip of hibiscus and rose water alongside Pt. Reyes oysters and caviar.&lt;br /&gt;&lt;br /&gt;It's nice to play and ponder.... but alas, back to work. It's going to be fantastic.&lt;/div&gt;&lt;br /&gt;&lt;div&gt;Might also want to save the date for a special event at the Red Vic next door....&lt;/div&gt;&lt;br /&gt;&lt;div&gt;On April 7th, starting at 6pm, there will be a fund raiser for Pie Ranch, who are helping with our garden. Magnolia beer, Alembic snacks will be served and there will be a screening of the documentary King Corn. Come by, have some food, drinks, get a peek at the garden. And last, but possibly most exciting, a very limited release of some Stranahan's Colorado malt whiskey. We split a barrel with D&amp;amp;M liquors of the Grand Mesa, aged two years in heavily charred, new American oak, and finished for 8 months in used French oak wine barrels. Big and delicious. type='text'>Loud Fast Rules...</title><content type='html'>So I have been doing some serious thinking about punk rock lately...&lt;br /&gt;The thing is, I sort of grew up with it, still listen to it, and try to maintain something of that ethos in this bar/restaurant enterprise. Putting a finger on how, or even why, that does or should manifest itself in our work is a bit tricky. I might be setting some little traps for myself, but what the hell, wouldn't be the first time.&lt;br /&gt;I started in this industry in high school, about 20 years ago, washing dishes for a little cash. I would spend my little fortune every two weeks on guitar strings, 45's, copies of Maximum Rock and Roll (still alive and kicking &lt;a href="http://www.maximumrocknroll.com/"&gt;http://www.maximumrocknroll.com&lt;/a&gt; ) and the occasional pack of Pall Mall's.  I am pretty sure a great many careers started in much the same manner.&lt;br /&gt;I still get a charge listening to those records, looking at the posters, remembering the shows, and the sense of community that came with it.&lt;br /&gt;Really, it's not all that different being so involved in the restaurant or bar scene. There are venues, a written discourse, fans and fanatics. There are iconoclasts and icons, boy bands and garage bands etc...&lt;br /&gt;So what does 'punk' mean to a restaurant? Where is the analog?&lt;br /&gt;Punk isn't always pretty (ask anyone who ever stood near the stage at a Jesus Lizard show), but it is a spectacle, an experience. I can say the first time I ate a slimy, live sea urchin, right out of its spiny shell, with just a little olive oil and lemon was nearly as much a revelation as the first time I put a Ramones cassette on in my bedroom.&lt;br /&gt;Punk has an urgency, like something to say or do that can't wait. One, two, three, four.&lt;br /&gt;Punk has an attitude, it's a bit snotty, not afraid to throw up the middle finger.  Of course, I would not advocate flipping "the bird" to a patron. I do advocate being a bit provocative, of doing it "your way", and being flexible if not completely indifferent to rules and conventions.&lt;br /&gt;Finally, DO IT YOURSELF...&lt;br /&gt;If you can't find something, or buy something, make it. Mr. Erik Ellestad was on hand, shaking and stirring with myself and the rest of the staff. A good time was had by all, big thanks to everyone who came by, to Erik for throwing down with us, to Jennifer at Small Hands for making some great syrups, and to our staff for being game. It is indeed challenging to throw out a 900 cocktail list for the night, but it does throw a little variety into the grind.&lt;br /&gt;So much fun, in fact, that we are currently trying to plan it out as a monthly affair. I'll keep y'all posted on the dates when Erik and I work it out.&lt;br /&gt;Last night, I had the pleasure of pairing some cocktails for the Three on Five event at The Fifth Floor restaurant. Emily Wines brought some muscle to the table, Craig from City Beer store brought some surprising flavors and finesse, and I brought some... ummm....booze. There was a bit of conversation about pairing philosophy, flavors and textures, and being a competition, some voting.&lt;br /&gt;In the end, Emily held on to her well deserved title for overall best pairings. Though I did win the best pairing for 2 of 5 dishes, as did Craig. Great chance to try some new stuff. I will post the menu when I get a little more time.&lt;br /&gt;This afternoon the chefs and I sat down to work out a very special NEW YEARS EVE at Alembic.&lt;br /&gt;The menu is being finalized, but think "dressed up" small plates. Foie gras, lobster, oysters, caviar, and of course bubbles and cocktail pairings to start of the night right.&lt;br /&gt;It's gonna be a black tie affair for us (you, however, come as you are.)&lt;br /&gt;We will be accepting reservations for the first seating of the evening (5 to 6pm) though there are not that many seats, so grab 'em now. We filled up fast, ran full tilt around the dining room slinging plates of pig and glasses of Suttons wine. The biggest dissappointment of the afternoon was that upon pulling out my camera to catch a few shots, I discovered a dead battery. All the bartenders made some incredible cocktails, it was great to try them and hang out with some friends. I'd also like to congratulate Marco from Clock Bar, who along with myself, will be moving on to the finals in St. Martin in February. Special thanks to Owen who loaned me a julep strainer.&lt;/div&gt;&lt;div&gt;Come by and try the Promissory Note cocktail (tequila, dry vermouth, Canton ginger liqueur, honey and absinthe).&lt;/div&gt;&lt;div&gt;FRIDAY!!! 75th Anniversary of the repeal of prohibition&lt;/div&gt;&lt;div&gt;In honor of this event, I will be pairing classic cocktails with our dinner menu. Most of which you won't find at the corner liquor store or neighborhood pub. Much of it subject to frequent and unexpected changes.&lt;div&gt;Keeping staff updated and informed can be a Sisyphean task.&lt;/div&gt;&lt;div&gt;I give this thought today, in the wake of a (yawn) management meeting this afternoon in which the topic, among many, was staff education.&lt;/div&gt;&lt;div&gt;The responsibility for this, of course, does not fall on any one persons shoulders. It takes a village, as they say. But who reaches out for who? &lt;/div&gt;&lt;div&gt;Do we make ourselves proverbial wells awaiting those thirsty for knowledge? &lt;/div&gt;&lt;div&gt;Do we become the means and message at once, tracking everyone down, and forcing information on them? The crowd was thick, too thick. I must say she handled it with characteristic cool and got voted the most unique cocktail of the night.&lt;div&gt;The C-note Cocktail&lt;/div&gt;&lt;div&gt;2 oz Square One Cucumber Vodka&lt;/div&gt;&lt;div&gt;1/8 oz Campari&lt;/div&gt;&lt;div&gt;1/8 oz apple cider vinegar&lt;/div&gt;&lt;div&gt;1/8 oz agave nectar&lt;/div&gt;&lt;div&gt;1 tbs basil seed&lt;/div&gt;&lt;div&gt;1 drop sesame oil&lt;/div&gt;&lt;div&gt;1 thumbnail sized chunk of fresh ginger&lt;/div&gt;&lt;div&gt;Muddle ginger with vinegar, Campari, and agave nectar. For those of you who got to try it at the Macy's Cellar event (thanks for coming out), we will be putting the &lt;em&gt;Still Life with Apples (after Cezanne)&lt;/em&gt; cocktail on the menu very soon. For those who missed it, it is Bourbon infused with apples and a maple syrup/cider vinegar gastrique served with a little sprig of fresh thyme, though we are considering dressing it with a spiced air.&lt;br /&gt;Buffalo and I have also been whacking up and cooking down figs with a little agave nectar to make a nice syrup. That one can be found in our &lt;em&gt;Black Monday&lt;/em&gt; cocktail with reposado tequila and tawny port and a little shaved almond, thanks to a sweet little mandolin we found at Kamei. As much care and thought as we put into our dishes and cocktails, I know there is something more to it.&lt;br /&gt;&lt;div&gt;The ambience will lend itself to a certain type of experience over another, whether one is looking for a romantic date spot, or an upbeat nightspot. In more conventional dining rooms, there is a sense of personal space, and personalized service all in the interest of preserving a small sphere for the individual party. The "pub" atmosphere is about the public. It is an atmosphere that promotes a certain amount of elbow rubbing, spontaneous conversations, and a certain democracy. Negotiations abound, for bar space, bathroom lines, attention from staff and guests alike. I find this dance sort of inspiring, people coming together to share an experience with friends and strangers, neighbors and visitors, over one of the oldest of rituals (ummm...food and drink.)&lt;/div&gt;&lt;br /&gt;&lt;div&gt;The real challenge is creating an atmosphere that speaks to this. Truth is that a lot of people don't like being around other people, and some nights draw in many different types of people. Tension happens, disappointment happens. The experience of our guests is certainly priority one, and the risks are high in the pub atmosphere. It is a challenge to be considered in every decision, from seating, lighting, menu and music. In the two years since we've opened the Alembic, we've amassed a good deal of type. Not just media reviews, in print and online... but bulging notebooks of ideas, scribbles and doodles on napkins, inventory and order sheets, fresh and soiled menus and chalk dust from yesterdays specials falling away from the blackboards. In these discarded leaves and swept up piles is the real story of our Alembic. That is where we place and find the inspiration behind our offerings, the hard work of a dedicated staff, the mistakes and lessons, and the successes that make the journey rewarding. &lt;div&gt;The new addition of a blog is a way for us to archive and share some of this ephemera. As we take pleasure in inviting you into our bar and dining room each night, we also welcome you backstage to see the story unfold, from conception to consumption. We will have posts from Ted, Jordan and Jenna from the kitchen as well as a steady pour of news from the bar, and the occasional pint from the brewers at our sister pub down the street. &lt;/div&gt;&lt;div&gt;Hopefully we can use this to bring together the many narratives happening in the Alembic universe to complete and enrich the story.&lt;/div&gt;&lt;div&gt;Thanks for tuning in.
